<p>When an acclaimed local chef tells you to check out a new restaurant, you know it’s worth investigating. In our case, the chef was Barry Edelman of Five Corners Kitchen and the restaurant was Thai Market in Marblehead. Located on Hawkes street in the old Sticky Rice location, Thai Market is owned by chef Tom Kanchananaga and his wife. And we’ll confess, since Barry recommended it a few weeks ago, we’ve eaten there or ordered takeout three or four times already. It’s that good.</p>
<p>What makes Thai Market worth return visits? The freshness and quality are amazing. The chef makes everything fresh on site; the shumai ($6) are a perfect example. Shumai ordered at most Asian restaurants are exactly the same; prefab and predictable. Thai Market’s are handmade, so both the texture and flavor are more intense.</p>
<p>The satay skewers ($5) are small, but the meat is tender and perfectly grilled, and the Paper Shrimp ($6) are crispy tasty morsels that don’t need a drop of plum sauce. The Tom Yum soup ($4) is delicious, with an addictive, spicy lemongrass broth.</p>
<p>The entrees are where Thai Market really shines, though. Chef Kanchananaga is a master at making sauces that are lush but not heavy, and he packs every dish with gorgeous vegetables. We’re not talking the standard onions and peppers here. He uses fat sugar snap peas, fresh zucchini, squash, crisp green beans, bok choy, and even crunchy lotus root. One of our favorites so far is the Seafood Panang ($16) that features both shrimp and tender scallops along with those veggies in a medium spiced red curry.</p>
<p><img class="alignleft size-full wp-image-4139" style="margin-right: 10px;" title="110311" src="http://www.northshoredish.com/wp-content/uploads/2011/11/110311.png" alt="" width="400" height="309" />We also tried the Ginger Fish ($18), red snapper served whole, crispy and savory on the outside and delicate and flaky on the inside. The Vegetable Drunken Noodles ($11) featured a symphony of veggies with a pleasing spicy basil garlic sauce. Even an old standard like Pad Thai ($11) is a little different, with the noodles slightly more al dente, so it’s got a lovely bite.</p>
<p>They don’t serve alcohol yet, but were just approved by Marblehead’s Board of Selectmen for a beer and wine license, so as soon as the paperwork goes through, they will be adding it to their offerings. In the mean time, the Thai Iced Tea ($2) is worth consideration.</p>
<p>So far, Thai Market hasn’t garnered much attention from the locals, so we urge you to head over and try it out. Chef Kanchananaga is just starting out and can’t support much of a staff yet, but don’t be put off if there’s a bit of a wait. Your meal will be worth it. And if you run into Barry Edelman picking up dinner for his family, tell him we said hello.</p>

Together, they make us very happy—but is pairing them as simple as all that? Well, yes and no, we learned last week at a terrific class taught by Bill Shube of Marblehead’s gourmet grocer Shubie’s.</p>
<p>The one-hour class was $25 and included six cheeses and four wines, plus a wealth of information. It was held in the store’s upstairs demonstration kitchen/classroom, which is bright and comfortable.</p>
<p>We began by tasting each of the wines, a petit mouton muscadet (Louis Metaireau, France, $13), a lambrusco (Vecchia Modena, Italy, $18), a cotes du rhone (Domaine Gris des Bauries, France, $14.99) and a cabernet sauvignon (Route Stock, California, $24). Bill talked about the qualities of each wine, the region it was from, and how one might think about pairings.</p>
<p>For example, the muscadet is from France’s northern region where they make a lot of goat cheese. Its crisp acidity makes it a great partner for food. Similarly, the bubbles in the lambrusco help clean your palate, making it a good partner, especially for cheeses you are unsure about pairing.</p>
<p>We then tasted each of the cheeses, which are all from New England. The Bonne Bouche from Vermont Butter &amp; Cheese (goat, Vermont) paired brilliantly with the muscadet, with the cheese somehow making the wine taste fuller.</p>
<p>Tiny Hannahbells from Shy Brothers Farms (cow, Mass.) are barely aged and very tangy. A bit difficult to pair, they require either a full bodied red wine or a sweet wine. The Landaff from Jasper Hill Cellars (cow, NH) is similar to a Welsh cheddar and paired well with both the muscadet and the cotes du rhone.</p>
<p>Blythedale Farms Vermont Brie (cow, Vermont) was delicious and incredible creamy. It was also a bit hard to pair but went well with the lambrusco. The Olga from Seal Cove Farms, (cow and goat, Maine) was very nutty and a bit crumbly (would be great on a salad). Its great flavor would be overpowered by a strong wine and went nicely with the cotes du rhone. The last cheese was the wonderfully earthy Black Ledge Blue from Cato Corner (cow, Conn.), which needed the strong flavors of the cabernet for a good match.</p>
<p>What we enjoyed most about the class was its accessibility. Rather than a know-all teacher telling his pupils what to drink and eat, Bill helped us understand why some pairings work well and how we might determine some happy matches on our own, which we’re definitely looking forward to doing.</p>

			<content:encoded><![CDATA[<p>I’m sure you’ve noticed a lull in the action around here lately, but these things happen when summer (and numerous family events) hit town.  We’re back in action now and have a few quick  ideas to supplement your summer fun this weekend.</p>
<p>Looking to start the thing off right? Head over to <a href="http://pmousse.com/">Pamplemousse</a> in Salem this evening from 5 -7 pm to help them celebrate 9 years in business. They’ll have cupcakes, wine and treats as well as Magic Hat’s #9 Not So Pale Ale.</p>
<p>If a bit respite from the sun sounds good on Saturday afternoon, Kappy’s in Peabody will be hosting their <a href="http://www.facebook.com/event.php?eid=141232449285604">Taste of New England</a>, which features locally produced spirits, beer and wine. It’ll be a nice opportunity to taste the wares of one of our favorite distilleries, Gloucester’s Ryan &amp; Wood, as well as the brand new Privateer Rum out of Ipswich, MA.</p>
<p>Saturday evening the place to be is Gloucester, for their <a href="http://goodmorninggloucester.wordpress.com/2011/07/15/july-2011-downtown-gloucester-block-party-map-and-schedule-and-deals-this-saturday-night/?utm_source=feedburner&amp;utm_medium=feed&amp;utm_campaign=Feed%3A+Goodmorninggloucester+%28GoodMorningGloucester%29">2011 Downtown Block Party</a>. Not only will there be live entertainment, street performers and general carousing, many of the local restaurants will be running deals for the evening.Yyou might want to stop in Cape Ann Brewing, where the guys are throwing a pig roast with live music, starting at 6pm.</p>
<p>Did you know that <a href="http://www.hawthornehotel.com/">Hawthorne Hotel</a> Chef de Cuisine Jennifer Normant is a contestant on this season’s Hell’s Kitchen? To celebrate, The hotel will be hosting a viewing party in their Grand Ballroom on Monday night at 7pm. Meet the chef, watch the show, and partake of cocktail and hors d’oeuvres special on offer that night.</p>
<p>On a sad note, we were devastated to see that an <a href="http://marblehead.patch.com/articles/electrical-fire-at-terrys-5-corners-started-in-ceiling">electrical fire caused severe smoke damage</a> to both <a href="http://www.5cornerskitchen.com/">5 Corners Kitchen</a> and <a href="http://www.terrysicecreamshop.com/">Terry&#8217;s Ice Cream</a> in Marblehead Wednesday afternoon. Both eateries are closed until further notice for clean up. We wish them a speedy recovery and hope they&#8217;ll be open again as soon as possible. If you&#8217;re in Marblehead this weekend, show Terry&#8217;s your support by stopping by their brand new ice cream truck, which will be parked across the street from the building. We love the idea of one Facebook poster, who suggested that Chef Barry of 5 Corners open an adjacent &#8220;pommes frites&#8221; truck so local could get their fix of his addictive fries during the clean up. We&#8217;d certainly be in line.</p>

<p>First, we&#8217;ll tell you how to start the weekend off right. Head over to <a href="http://lynnwayliquors.com/">Lynnway Liquors</a> in Lynn this afternoon and say hello to the effervescent Emily O&#8217;Brien. She will be on hand from the <a href="http://www.facebook.com/UrbanWineProject?sk=info">Urban Wine Project</a>, and will be pouring tastes of their brand new Oxford Street Pinot Noir and Central Square Chardonnay from 4:30 to 6:30.</p>
<p>On Saturday from 11:00 to 2:00, The Food Project is holding its second-annual <a href="http://thefoodproject.org/lynn-csa-farm-share">Lynn Farm Fest</a>. There will be a plant sale that includes seeds and garden supplies, a workshop on planning and planting a raised-bed garden (at 11:00 and again at 1:30), and you can sign up for CSA shares, which start on Monday. <p>From 1:00 to 5:00 on Saturday, you can get your sugar fix at the <a href="http://www.capeannvacations.com/festival-event.cfm?id=1170&amp;mk=3&amp;ck=0&amp;em=&amp;ey=">Newburyport Chocolate Tour</a>. Pick up your ticket ($15) and goodie bag at the Unitarian Church (26 Pleasant St.), then walk the downtown route and partake in delectable chocolate treats from more than 20 participating vendors.</p>
<p>Shubie’s <a href="http://campaign.r20.constantcontact.com/render?llr=ngna7fbab&amp;v=001UDahdbFKBLk03mGdXja7VsrPh1c9PuEOiAh5LPFno5Nk8h6sepM-QY4w8uMTuvgHqT0dUUqDWOGG2HURD8QZ4B67oIMcMRPquX9UPrppLXfvbNKwL1wUBQ%3D%3D">Food and Wine Festival</a> will take place from 1:00 to 5:00 in Marblehead regardless of the weather, and it promises to be a doozy. There will be more than 40 wines for tasting, and purchasers will receive 20% off a case or 25% off two cases. There will be many food samples, including a Olympic extra virgin olive oil, Sailor’s Swagger pineapple hot sauce, and Chef Lynne’s papas fritas (hand-cut fries). The one we&#8217;ll be checking out is an exclusive debut of a new Jasper Hill cheese, Conundrum. It promises to be a cross between the Winnimere and the Moses Sleeper; spoonable, slightly sweet, slightly woodsy. We&#8217;ll try not to swoon.</p>

<p>Last but not least, this weekend marks the end of prohibition in Salem. Well, the winter kind, anyway. All the restaurants with partial and seasonal liquor licenses can begin serving again on April 1, and they are celebrating. <a href="http://www.lobstershantysalem.com/">The Lobster Shanty</a> is throwing an opening day open mic shindig and rolling out a new menu, and <a href="http://www.62restaurant.com/events63.html">62 Restaurant and Wine Bar</a> is unveiling their spring cocktail list. 62 will be serving complimentary hors d’oeuvres from 5:00 to 7:00 in the lounge. After 7:00, they’ll serve a complimentary signature spuntino with each drink purchased from the new cocktail menu<strong> </strong>in the lounge.</p>
<p>From 8:30 to 11:00 over at <a href="http://www.feedyourwolf.com/cms/">Howling Wolf</a>, there will be free Mexican wings and buffalo wings. Lee Hawkins will be singing the blues, and there’s a raffle for Red Sox and Revolution tickets. And starting at 8:00, there’ll be live music by Clay Ventre and the Bond Girls and complimentary passed hors d’oeuvres at <a href="http://www.cafepolonia.com/">Café Polonia</a>.</p>
<p>So ignore any white stuff that happens to be falling from the sky today and get out there and enjoy!</p>

<p>Could it be that the economy is on its way back to health at the same time winter releases us from its clutches? Actually, we’re not sure, but we were encouraged when we heard about a large new restaurant opening in Marblehead and stopped in to check it out.</p>
<p>Hungry Betty’s is a casual dining restaurant located on the second level of the Village Plaza on Pleasant Street. Owner Patty Johnson, who took a few minutes out of her busy opening weekend to talk with us, has worked in restaurants for more than 20 years. The past 10 of those years she&#8217;s provided food and beverage to the members of Marblehead’s Dolphin Yacht Club. The menu she developed for the new restaurant with Chef Billy Glidden is highly accessible, with casual comfort food at reasonable prices.</p>
<p>One of Johnson’s main goals is to provide a place for families to come on a regular basis—whenever parents don’t feel like cooking. In addition to entrees like burgers, haddock, meatloaf, stir fries, and chicken with fig/onion sauce ($9 to $17), there is a $5.25 kids menu that includes grilled chicken, pizza, chicken fingers, and a cheese quesadilla. All of the food is made from scratch on site.</p>
<p><img class="alignright size-medium wp-image-3511" style="margin-left: 5px;" src="http://www.northshoredish.com/wp-content/uploads/2011/03/030411b-472x300.png" alt="" width="472" height="300" />There’s an 18-table dining room, a bar that seats 16, and a lounge area with another 15 tables. The décor is fresh and soothing, with neutral tones, black furniture, and plenty of light. Johnson noted that she wanted to stay away from the typical nautical theme.</p>
<p>Although many of the restaurant’s crew are people Johnson knows from the Dolphin and other previous jobs, she held back a bit on the opening menu. There are plenty of choices, but Johnson said she has more offerings planned once the kitchen and front-of-house staff gets its sea legs, so to speak. For example, the salmon salad entree comes in a large chilled bowl and is a popular choice; Johnson plans to add several variations.</p>
<p>Johnson, who has lived in Marblehead since 1989 and whose nickname was the inspiration for the restaurant name, believes the time is right for this type of establishment and for the Village Plaza to be revived as a destination for Marbleheaders. We applaud her seemingly boundless energy and once she and her crew have settle in, we’ll return to try the food—we’ve got our eye on the steak bomb egg rolls.</p>

			<content:encoded><![CDATA[<p>The holidays are over and that means it&#8217;s time for food events to kick into high gear here on the North Shore. Our heads are swimming just looking what&#8217;s going on in January and February. And that’s without considering Valentine’s Day specials, which we’ll cover separately.</p>
<p>On Tuesday January 18 at 7:00, Chef Matt O’Neil will be doing a cooking demo and three-course tasting at <a href="http://www.theblueoxlynn.com">The Blue Ox</a> in Lynn ($39). There will be a mache salad with braised beets, walnuts, parmesan, blood oranges, and blood orange vinaigrette followed by butter-poached lobster and porcini/saffron quinoa. For dessert, a honey cake with chocolate, raspberry puree, and whipped cream. We’re salivating already. Call (781) 780-5722 to reserve a space.</p>
<p>The next Tuesday, January 25, <a href="http://www.hipfinz.com/salem.php">Finz in Salem</a> is putting on a vodka dinner hosted by Pinnacle Vodka at 6:30 ($59). It begins with oysters accompanied by a mango vodka-blood orange puree cocktail. Next is an Asian scallop ceviche with a lychee martini, mojito grilled swordfish with a berry vodka mojito, and espresso rubbed tenderloin with a caliente café martini. Dessert is a Pinnacle and strawberry sorbet with strawberry Pop Rocks. Sounds like a taxi may be in order after this one.</p>
<p>Vodka is also the star of <a href="http://www.redrockbistro.com">Red Rock’s Tuesday Tasting</a> on the 25<sup>th</sup> at 7:00 ($25 including tax and gratuity). Russian Standard Original, Platinum and Imperial vodkas will be featured in six cocktails. Russian-influenced appetizers like smoked trout, oysters, salmon roe caviar, dark pastrami, gravlox, pickled beets, and herring will accompany the drinks. Break out your (faux) fur hat and head on over to Swampscott.</p>

Tickets are on sale at the Salem Chamber of Commerce office, 265 Essex Street Mon-Fri from 9:00 to 5:00 and will be on sale the night of the event based on availability (the event sold out last year). Sugar rush, here we come.</p>
<p>On Tuesday February 8 <a href="http://www.redrockbistro.com ">Red Rock’s Tuesday Tastings</a> is USA Craft Beers ($25 including tax and gratuity. At 7:00, Local beer master Kyle Sartanowicz will offer expert commentary while attendees taste six outstanding made-in-the-USA beers with foods to match.</p>
<p>Last but not least, on Thursday February 10 at 6:00, <a href="http://www.caffegraziani.com ">Caffe Graziani</a> in Salem is hosting an international wine  dinner featuring a five-course meal and an abundance of French, Italian, and Argentinean wines. <p>We’ve been taking some time off over the holidays, so you haven’t heard much from us here at the Dish. The new year is upon us and we are back in action, hoping everyone enjoyed their holidays, vacations, families, and friends. We certainly did!</p>
<p>Due to a crazy few weeks, we decided to stay in on New Year’s Eve to relax and re-charge. While we love all the deals and hoopla offered by area venues, home-cooked food, cheap booze, and sleep are also things we’re quite fond of.</p>
<p><a href="http://www.northshoredish.com/wp-content/uploads/2011/01/010210d1.png"><img class="alignleft size-medium wp-image-3204" style="margin-right: 10px;" src="http://www.northshoredish.com/wp-content/uploads/2011/01/010210d1-298x300.png" alt="" width="298" height="300" /></a>To usher in 2011, we decided to throw a couple of lobsters in the pot, and we clearly weren’t the only ones with that idea. Things were hopping when we arrived at Marblehead Lobster Co. A small, family-owned place that’s been around for years, Marblehead Lobster sits right on Little Harbor, affording terrific views as you park. (If you’re not familiar with the area, be careful not to overshoot it. The drive is at the curve in the road where Orne Street leads into Beacon Street, and it’s easy to miss that right turn.)</p>
<p>In fact, you can see the view here in a <a href="http://www.katyelliott.com/blog/2011/01/happy-new-year-lobster-rolls.html">video by Katy Elliott</a>, who must have arrived there minutes after we left. Sorry we missed her!</p>
<p>We picked up a couple of healthy looking medium-sized crustaceans at $8 per pound (chickens were $6/lb and selects $10/lb), and instead of heading out the door, lingered to ogle the other food stuffs available in the tiny shop. We had no idea they offered prepared foods, and on special that day were lobster quiche and a lobster bisque that was described as being “a lighter version, but still containing all of the good stuff.” The gentleman in front of us in line had called to order a couple of baked stuffed lobsters. The 1½ lb lobsters were stuffed and ready to be heated, a bargain at $10 each.</p>
<p><a href="http://www.northshoredish.com/wp-content/uploads/2011/01/010211b1.png"><img class="size-medium wp-image-3201 alignright" style="margin-left: 5px;" src="http://www.northshoredish.com/wp-content/uploads/2011/01/010211b1-388x300.png" alt="" width="349" height="270" /></a>Of course, we ended up leaving with more than we came in for. The man of the house opted for some gorgeous Wellfleet oysters (.95 ea.), which they kindly shucked for a mere additional dollar and offered to us in a tray full of ice. When asked about the plastic container, we were told, “Just bring it back when you’re done.”</p>
<p>We also brought home some seafood-stuffed mushrooms to pop in the oven. Nine white mushroom caps generously topped with a stuffing containing crab, shrimp, and scallops as well as plenty of buttery crumbs were a deal for just under $5. And man, were they tasty&#8211;we plan to serve them the next time we have dinner guests.</p>
<p>Although we’ve been buying lobsters at this spot for years, we’d never really taken the time to see what else was available or to chat with the staff. Having discovered their tasty non-lobster offerings and been reminded of the great service, we’ll make it a point to return to Marblehead Lobster more often.</p>

<p>Tonight is a great night to get some shopping done in Salem. Many of the stores are open late and are offering deals and treats to shoppers. Salem Wine Imports will have a free tasting and special discounts; Milk and Honey Green Grocer will offer cheese and crackers, food samples, and 15% off your purchases; and Pamplemousse holds their annual open house from 6:00 to 9:00 with wine, hors d&#8217;oeuvres, and free gift wrapping.</p>
<p>Also open late tonight are the shops in Hamilton and Wenham. Stop into the Wenham Museum from 4:00 to 8:00 to check out their terrific gift shop as well as the Gingerbread Express model train layout and the Gingerbread Contest Judging.</p>
<p>From 6:00 to 9:00 tonight, the Mansion at Turner Hill hosts the 13th Annual Taste of Ipswich Wine &amp; Food Gala. You can taste local fare prepared by Ipswich’s finest restaurants, sip wine, and sample Ipswich and Stone Cat brews, as well as Mercury Soda Pop. This year, the proceeds will benefit the Ipswich Family YMCA. For more information, call the Ipswich YMCA at (978) 356-9622.</p>
<p>The Salem fun continues on Saturday, when Santa will make a visit to Coven. Your small person can check out the big guy while you warm up with a coffee and tasty treat. Also on Saturday, Green Land Café will be holding a Toys for Tots drive. Children eat free when they bring a toy to donate.</p>
<p><img class="alignright size-full wp-image-3154" title="Christmas-walk-logo-no-year" src="http://www.northshoredish.com/wp-content/uploads/2010/12/Christmas-walk-logo-no-year.jpg" alt="" width="270" height="173" />Marblehead continues its annual Christmas Walk this weekend with music, street entertainment, and shopping deals on both Saturday and Sunday. On Saturday, you’ll find two  wine tastings. From noon to 5:00, Haley’s will be sampling Y &amp; B organic wines with Neil Deininger. (Even though it looks like a juice box, we like the Sauvignon Blanc) From noon to 4:00, the fun loving BZ Zohn will be back at Shubies with for a tasting of French, Italian, and California wines. Joining BZ will be Demaris Cahoon, owner of Landmark Winery in California, and Helen Gallo of Winebow Imports.</p>
<p>If you’re looking for a tree this weekend, stop by Marini Farm in Ipswich. Not only do they offer the kids cookies and crafts with Santa and tractor rides around the farm, but they’re also ladling out free bowls of hot chowder from the Clam Box to help fend off the falling temps.</p>
